TGIF!
April 20, 2012 Sorry about the lack of posts this week! I have been doing some home improvement projects (painting - ugh) at night after the baby goes to bed, so there has been no cooking in my house this week. Jeff has been out of town, so it's been easy to whip up a sandwich or roasted veggies for myself and call it dinner :)
I promise I will be back on Monday with some good eats and a little challenge. I want to try feed our family healthy meals for $75 next week. This includes the baby (diapers, formula, homemade baby food) and breakfast, lunch, and dinner for Jeff and I from Mon- Fri. And this includes HEALTHY meals, full of veggies and protein, not Tostinos pizzas, soda and chips, and Ramen Noodles. I'll share all the details with you next week.

My inspiration for the challenge came from Brittany, who blogged last week about how people claim they can't eat healthy meals on government assistance ($102/week for a family of three). We have plans next weekend, so I reduced the amount to see if we could stick with it for the weekdays. She gives some great tips on how to save some money while still eating whole foods. 
My sister works in public health, so food policy is near and dear to her. We were just talking last weekend about how the obesity epidemic in America tends to stem from poverty. I'm convinced that if we are resourceful, we can stick to the budget that these families are given, and still eat healthy, well-balanced meals. Living on a budget should not be an excuse to feed your family junk. Hopefully we can prove that!
Because real food tastes sooo much better. Even Kenley knows that :)

Now that will be an interesting discussion and "experiment." Remember that economically disadvantaged people often don't have the food choices of us more fortunate, as they rely on the 7-11 around the corner rather than the grocery supermarket across town.
Good luck. $75 buck here a week barely keeps us in milk and cheese (milk = 4.59/gallon and cheese=12.00/3/4 lb.

Great point! I just went to our local grocery store, but I know people don't always have the transportation to do that. Just wanted to challenge myself to see if we could make it through the work week. We will see!
John, point well taken. Food deserts are a barrier to healthy eating in urban and rural areas.
Yet another challenge for people, regardless of income, is their lack of knowledge and skills in preparing healthy foods. I so appreciate food blogs like my sisters that provide cooking techniques, share recipe ideas, and promote healthy eating - they are great resources for anyone along the cooking spectrum!

Great idea Beth! Did you see how many posts that other girls blog had!! Wow, people were not too happy w/ her assumptions!. With my 3 kids drinking Organic Milk at $6.99 or $5.99 on sale a gallon, we prob spend $75 just on Milk! haha
Oh, I know.....she got some bad comments. I felt terrible for her!
OMG - I can't believe Organic milk is so pricey for you guys! We buy it too, but it's only like $3.99! And we don't use it much, only for smoothies and cooking :)
