Roasted Portabello Ruebens
April 13, 2012 TGIF! I have a super quick and easy recipe for those of you that like rueben sandwiches....they happen to be one of my favorites! Turkey ruebens are amazing. These might even be better.

The key to these are the roasted portabellos and the homemade thousand island. It takes no time to make thousand island dressing, and it's so much cheaper than buying it! 
For the mushrooms, I roasted them in a 425 degree oven for about 20 minutes.
I grilled the bread on a flat top, smothered in the dressing and topped with slices of swiss cheese.
The result is a yummy, meat-free alternative to a classic sandwich. You've gotta give these a try.

ROASTED PORTABELLO RUEBENS
4 slices thick wheat bread
Butter, for toasting
4 portabello caps
salt and pepper
1/2 cup saurkraut
4 slices swiss cheese
Thousand Island Dressing:
1/4 cup mayo
2 tbs ketchup
2 tbs minced onion
salt and pepper
1/2-1 tsp sugar
1 tsp sweet relish
Make the dressing, put into fridge to chill. Sprinkle mushroom caps with olive oil, salt, and pepper. Put on a baking sheet and place into oven on 425 degrees for 20-25 minutes (depending on size).
Butter a skillet and place bread on medium-high heat, slathered with thousand island and topped with cheese. When cheese melts, top with mushrooms and saukraut. Enjoy!

This recipe sounds fantastic but I am wondering if there is a missing ingredient under the Thousand Island Dressing recipe. All is says in 1/4 cup. Should it be 1/4 cup of mayo? Thanks!
