5 Layer Mexican Sliders
May 3, 2011 Hola!! In honor of Cinco De Mayo, we are eating Mexican inspired dishes all week long. Not only is it delicious, it transports us back to the lovely beaches and the resort we enjoyed during our wedding week :)

Ahhh, the swim up bar....
L-O-V-E. Call us lame (I do it all the time), but we never celebrate this holiday at a Mexican restaurant. We'd much rather cook up some delicious food, sit outside with some margaritas, and celebrate in the comfort of our own home.
Last night, to start our Mexican week, I made some sliders. It was my very first time using the Green Egg! After some trial and error with temperature, they came out great. For my meat mixture, I used All-Natural Trader Joe's Ground Beef. I added in one chipotle in adobo (minced), a dash of worchestershire sauce, and a teaspoon each of Montreal Steak seasoning and Mojito Lime seasoning.

I formed the mixture into 3 ounce patties. I always put an indention in the middle, so they will look even when they puff up on the grill.
While these cooked (only about 3 minutes on each side), I made Eva Longoria's chunky guacamole. I may never make the mushed up kind again! I used one avocado, along with some onion, jalapeno, tomato, cilantro and lime juice. Seasoned up with salt, this was a perfect side and just the right amount for two hungry adults!

Once the burgers were done, I toasted my little sourdough slider rolls (also from TJs - can you tell I did all of my grocery shopping there this week?). I topped the burgers with some monterey jack cheese....
Next, I topped them some TJ's Salsa Verde. So good...

Then I crushed a few tortilla chips, and covered then with some leftover beans, topped off with a jalapeno!

These sliders taste just as ridiculous as they look.
Served up with some of that delicious chunky guac and multigrain scoops (the best!), this was the perfect Mexican meal.

Enjoy Amigos!

Nice! Those look awesome! We eat so much mexican in our house too! Where do you get Mojito Lime seasoning? and no dried jalapeno?? another thing that I am on the lookout for since I saw it in one of your past posts. I'm going to try and make it to the farmer's market here and see if someone sells it.... Great Post!
Glad you liked it! There will be tons of Mexican recipes this week.....trust me.
I got the mojito lime seasoning at the Farmers Market too- and that jalapeno powder is so, so good. You have to try to find some!
I have also used chili-lime seasoning that is really similar, so you can always try that.
