Roasted Potatoes with Lemon-Tarragon Butter
March 31, 2011 I know, I know. Another potato recipe! We've been making them a lot lately, so I have a few in the reserves. Don't you always get so bored with regular roasted potatoes though? I needed to find a way to spice things up a bit. This definitely did it!

I started by zesting half of a lemon, and chopping up my potatoes and tarragon. What I love about roasting things, is that while it's in the oven, you can make the rest of your meal and not worry about it. Genius.
I also melted some butter, and added in my zest and tarragon. Basil or parsley would be good, too.


I quartered petite red potatoes, then spread them on a lined cookie sheet that had been sprayed, Cooked at 425 for about 25 minutes, they were good to go! I tossed them in my butter sauce....
And served these guys alongside my burger.

Crunchy, lemony, and delicious. Open wide!
ROASTED POTATOES WITH LEMON-TARRAGON BUTTER
2 lbs petite red potatoes
3 tbs salted butter
1 1/2 tbs chopped fresh tarragon
1 tsp lemon zest
Cooking Spray
salt and pepper
Cut potatoes into quarters and place on a sprayed baking cheet. Spray the tops, and sprinkle with salt and pepper. Bake for 25 minutes at 425 degrees. If the tops are not brown, turn on the broiler for a minute.
Melt butter in a small dish, and add in lemon zest and tarragon. Toss potatoes in butter sauce and enjoy!
