Oreo Stuffed Chocolate Chip Cookies

Yeah, I went there. Sorry to do this to you....you're either gonna love me or hate me for this recipe. But either way, you'll love to eat these!

It's exactly how it sounds....an oreo stuffed inside a gigantic chocolate chip cookie. I know.

Before I go into these, we had a bunch of good eats this weekend. Recipes are coming soon. Friday night started off with some homemade Four Cheese and Spinach Ravioli....

Saturday morning included a Feta and Spinach Omelet...

Saturday night included some KING CRAB LEGS!

And Filet, cooked on a Himalayan Pink Salt Block...

It was heaven. So delicious! I'll definintely go through the step by step on this one for y'all.

Saturday night was a fun night at home for us. We went through our wedding music, played a little Wii, ate some food, and had a couple drinks....naturally. Martinis were flowing...

Followed by some yummy champagne from Jeff's brother...

Out of our new Waterford Crystal engraved with our names and wedding date....which are actually pilsner glasses. Details, details...

It was such a fun night. Happy Valentines Day, Jeff! Here's to the next 50 :)

I can't wait to head out for some sushi tonight! I know a lot of people are staying in and cooking dinner, but since I do that almost every night, it's not such a treat for us, ya know? Sushi is also SUCH a treat, because I can't make it at home! Yet....

Ok, without further delay, I want to tell you about these ridiculous cookies. Instead of the real deal Oreos, I went to TJs to get their all natural version of the Oreo.

The filling is MUCH creamier, and there are real specks of vanilla bean in the cream! See?

Speaking of real vanilla bean specks....I used my homemade vanilla extract in the cookie dough this time! Hello, love...

This stuff has been fermenting for over 2 months! I'm so glad I got to use it- finally.

Start by making your cookie dough. I think everyone knows how to do this, right? Cream your butter and sugars, then add in vanilla and eggs. Next, mix your dry ingredients and incorporate to your wet.

Now, add you chocolate chips :)

Set up your station. I use a silpat mat for non-stick cooking, but parchment paper works great, too.

To build these, take a scoop of cookie dough, then top it with an Oreo, then add another scoop of cookie dough.

Yep, that's a good 3 cookies in one! Don't hate me...

And I hate to bring up the fact that I have to wear a bathing suit in a week. Expecially after looking at the size of these once they are baked. Yikes...

How else can you fit a whole Oreo in there?

I cut one in half, so you could really get the effect of these guys...

As you can see, it makes A LOT. I was drowning in cookies.

Just do it! Most of you won't be in a bathing suit for another few months....you've got time. Enjoy your Valentine's Day with your honey, your dog, or your single friends. And make these. Cooper said so...

OREO STUFFED CHOCOLATE CHIP COOKIES

Adapted from Picky Palate

2 sticks softened butter

3/4 Cup packed light brown sugar

1 Cup granulated sugar

2 large eggs

1 Tablespoon pure vanilla

3 1/2 Cups all purpose flour

1 teaspoon salt

1 teaspoon baking soda

10 oz bag chocolate chips

1 bag Oreo Cookies, I used Joe Joes from TJs

1.  Preheat oven to 350 degrees F.   In a stand or electric mixer cream butter and sugars until well combined.  Add in eggs and vanilla until well combined.

2.  In a separate bowl mix the flour, salt and baking soda.  Slowly add to wet ingredients along with chocolate chips until just combined.  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie.  Take another scoop of dough and place on bottom of Oreo Cookie.  Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.  Place onto a parchment or silpat lined baking sheet and bake cookies 10-15 minutes or until cookies are baked to your liking.  Let cool for 5 minutes before transferring to cooling rack.

I'm in awe. This could quite possibly be the best cookie concept ever.

I like the filet / king crab combo. King Crab Legs = My Fav.
