Enchilada Pizza

Well, I survived the weekend. I will definitely share some good eats and fun times with you tomorrow.....Asheville's restaurants are amazing! I had such a great time with all my girls. Unforgettable, for sure :)

This recipe is almost too easy, so it's really great in a pinch. I used mostly prepared foods for this pizza, which is really unlike me....it was a last minute meal though. It's still better for you than most takeout food, too. A win, win! Sorry about the pics, I was in a rush, and these definitely show it!

Start with a prepared (or homemade) pizza crust. I used Boboli Whole Wheat.

I had all of my ingredients ready to go.

Start by spreading about 3/4 of the can of refried beans on the crust, topped with half of the enchilada sauce.

Next comes the cheese. I also topped the cheese with my new fajita seasoning. A sprinkle of taco seasoning would be great, too.

Next, I topped it with some diced green chilis, olives, and green onions.

Bake your pizza according to package directions.

 Finally, top it off with some shredded lettuce, tomatoes, and cilantro. Hot sauce is optional, but recommended :)

ENCHILADA PIZZA

1 large pizza crust

1/2 can of red enchilada sauce

3/4 can of refried beans

1.5 cups shredded cheddar

4 oz can sliced black olives

4 oz can diced green chilis

2 tbs taco seasoning

1/4 cup chopped green onions

Optional toppings: shredded lettuce, diced tomatoes, cilantro, hot sauce

Start by preheating your oven to the advised temp according to your pizza crust. Spread the beans on the crust, followed by the sauce. Top with cheese, taco seasoning, onions, olives, and chilis. Bake according to package. Top with optional toppings and serve!
