Cheesesteaks My Way.
December 7, 2010 Good Morning! it's super chilly here this morning....I had to bring the space heater into the bathroom while I got ready! Our house is an icebox in the winter. Apparently, they did not make energy efficient houses in the 70s.
I made these sandwiches last Friday night on a whim. I had some cubed steak in the freezer, and instead of making Pioneer Woman's Steak Sandwich (like I had intended), I decided we needed to spice things up a bit. And use a little less butter than 1/2 cup :)
Typically, Cheesesteaks are made with thinly sliced beef, but I really like the meatiness from the cubed steak. When sliced against the grain, it isn't as tough as you would think. Not to mention, I think this meat cost me $3.50?? Great deal!

I seasoned the beef with pepper, lemon pepper, and season salt. It's a wacky combo, but it really works in here. Next, I sauteed some mushrooms and onions in melted butter, salt and pepper.
The bread that you use for ths sandwich is key! It's gotta hold up to all the flavors and drippings. I chose a big mutligrain baguette.

I sliced it in half (that's right- we were hungry!), then toasted, buttered and mayo'd it. I know that's not a word, but you understand. Right?
The mayo is definitely optional, by the way.

Next, I removed my veggies from the pan, then added in the seasoned beef. I cooked it only for a couple of minutes on each side.

Once the meat was browned, it was time for the veggies to get back in the pot! I also added in a little soy sauce (I was out of Worchestershire) and hot sauce.
I piled the mixture on top of my toasted baguettes, then topped them with some shredded Italian cheeses. Under the broiler for a couple of minutes, and you've got a really yummy sammy.

Mmmm.....cheese.

CHEESTEAKS MY WAY
- 1.5 lbs cube steaks
- 1 large onion
- 8 oz sliced portabello mushrooms
- 2 multigrain sub rolls
- 4 tbs butter
- 1/2 cup shredded italian cheese
- 4 tbs mayo (optional)
- 1/2 teaspoon seasoning salt
- 1/2 teaspoon lemon pepper
- 3-4 tbs Worcestershire sauce
- 5 dashes hot sauce
Directions
Melt 2 TBSP butter over medium heat in large skillet. Slice onions and mushrooms and cook until soft and light brown (7-8 minutes). Remove and set aside. Meanwhile, slice cube steak thinly against the grain. Sprinkle with seasoned salt and lemon pepper. After onions have been removed from skillet, melt another 1 TBSP butter over high heat. Add meat in single layer. Cook for two minutes on each side.
Add worcestershire sauce and hot sauce. Add cooked onions and mushrooms. Stir to combine. Butter and mayo halved French rolls and toast in the boiler. Top with meaty mixture, then add cheese and place back under broiler until melted.

Hey - Just curious. Why did you season the meat with Lemon Pepper? That's not a common seasoning for beef is it? Was there a specific reason? Lemon pepper may be my favorite seasoning. I put it on almost everything I eat. Its fantastic on tomatoes and pickles. Seriously. Try it. It'll set you free.
Btw, I like that substitute of the quinoa on that stew you made. I forgot to mention that. I like that stuff. :)

I have no idea why! I think I saw Pioneer Woman put lemon pepper on steak? It is really delicious. So funny that you mentioned that, too. Jeff tells me about how you used to put that stuff on pickles. It's a little odd- no offense :)
