BLT Pizza (Bacon, Leeks, and Tomatoes)
December 16, 2010 It's a sad day for our family. My Grandad passed away last night, after complications with a fall on Saturday afternoon. He was such a sweet and amazing man, and he loved his kids and grandkids so, so much.
We got to spend a lot of time with Grandad during our visit to Canada this past February. We listened to tons of stories about the war, and about all that he saw and did throughout his years oversees. It was so neat. He was a brilliant Doctor, and being around him was always such a treat. We will miss him terribly.
We love you, Grandad!
That being said, I'm not really in the mood to blog, or pretend that I'm in high spirits today. It's also my sister's birthday (Happy Birthday Tiay!), but I will give her a shout out tomorrow. She deserves it.
I did want to leave you with a easy recipe that I made last night for dinner. It's really yummy and made me realize that I need to remember to put bacon on my pizza more often...
BLT PIZZA
5 slices of bacon, cooked and crumbled
2 leeks, thinly sliced
2 cups cherry tomatoes, sliced
1 tbs butter
Pizza dough
1 cup pizza sauce
2 cups mozzarella
Saute leeks in some butter, salt and pepper for about 5 minutes. Spread out dough, then top with sauce and cheese. Layer leeks, then crumbled bacon, then tomatoes and top with more cheese.
Bake according to pizza dough instructions. Mine took 15 minutes at 450.
